Olive oil is the main source of fat in the Mediterranean Diet.
 
Its molecule consists by 83% from monounsaturated oleic acid - King of fatty substances - and the rest of the molecule consists of saturated and unsaturated fatty acids in the most harmonious combination. It also contains about 300 substances, some of which are squalene, sterols, polyphenols, flavonoids, tocopherols (vitamin E), carotenoid pigments (provitamin A), phenolic substances, chlorophyll, minerals, trace elements etc. which give it a wonderful flavor, aroma.
 
All these antioxidant micronutrients benefit greatly the human body and they protect it from damage from oxidation by free radicals, while turning olive oil into a strong oil product sheltering it from oxidation.
